Not all Polish soups require meat or vegetable stock. For the hot summer days we have a soup, which is served cold and turns out to be a very healthy one.
Ingredients:
1 bunch of beetroot leaves (big, grown ones)
1 tub of natural yoghurt
Half a bunch of dill (chopped finely)
1 bunch of spring onions (chopped finely)
1 bunch of radishes (sliced)
1 lettuce
1 fresh cucumber (peeled and sliced finely)
3 eggs (boiled and cut in quarters)
Salt
Pepper
Preparation:
Wash beetroot leaves and chop them.
Place in a pan with water and bring to boil. When soft, turn the heat off and let it cool down.
Wash lettuce, shred the leaves (never use knife to chop it, lettuce leaves absorb metal and change their taste into bitter when a knife is used) and add them to boiled and cold beetroot leaves.
Add the rest of ingredients, salt and pepper.
Stir well.
Serve cold with eggs.
