Fruit soup

I remember, in the ‘80s, my mum used to prepare this soup quite often. Mainly, because not much was available in the shops then. My Nan had some hens so she had always fresh eggs and used to make pasta herself, my granddad had his allotment and lots of fruits, so everything was there.


Ingredients:

1 cup of fresh, pitted cherries
1 cup of fresh strawberries
1 handful of plums (pitted, suggested Victoria plums, cut in quarters)
1 apple (peeled and cut into pitted chunks)
Sugar (for taste)


Preparation:

Wash all the fruits, chop them as suggested and add to a pan with water. Bring it to boil and then simmer till fruits are soft.

Add sugar for taste.

Serve hot with freshly boiled pasta.
